Here are a couple of meals I’ve prepared over the last week from Hello Fresh. These arrived the week of the Super Bowl so were more like casual, eat while you watch the Super Bowl meals.
Barbecue Pork Sliders, Sweet Potato Fries and Coleslaw
Everything was so good! The ingredients for the barbecue pork sliders even included everything to make the BBQ sauce from scratch, yet the entire meal took only 45 minutes to make!
I love sweet potato fries and if I had realized how easy they are to make, I would have been making them all the time. Really, Hello Fresh sent me a 1 large sweet potato. I peeled it, cut it into half inch strips, then tossed it with a little olive oil and salt and pepper, spread on a cookie sheet and stuck in a 400 degree oven for 20 minutes.
When recipes say to “toss” ingredients together in a bowl, I usually try and use the ziploc bags that Hello Fresh sent the ingredients in instead of a bowl. Less dishes and so easy! Just tossed the cut sweet potato, olive oil and salt and pepper into a ziploc bag, shook it then threw the bag away. I’m all about simplifying! Did the same thing for the cole slaw and salsa for the tostadas, which by the way were amazing! So good and only 30 minutes! The tostadas were a layer of beans, chicken, avocado-tomato salsa and sour cream.
I’m going to miss my Hello Fresh meals while I’m recovering from back surgery; I’m putting the subscription on hold until I feel ready to cook again. Something to look forward to!
